This is the Lizard cake I made for my son’s sixth birthday.
Tip 1: Leave the cake uncovered in the fridge overnight before carving it into shape.
Tip 2: Use a fine serrated knife to carve the cake.
Tip 3: Use Trex or similar to cover your work surface, as well as your hands, before kneading and rolling out your fondant; it stops it sticking to the surface. Some people use icing sugar for this but it dries the fondant out and gives it the appearance of “elephant skin”.

Hi, can you explain what ‘Trex’ is please? I’m in the UK and haven’t heard of it before, sounds better than icing sugar, which I can have problems with!
I plan to use your cake shape for my son’s 7th birthday on St. Patrick’s day this year, thank you for a brilliant idea.
