This is a Rainbow Birthday Cake for my daughter’s 3 year old birthday party! It was such fun to make, and not hard at all.
I started by mixing 3 white cake mixes, then I separated them evenly into 6 bowls. I then added the dye to each bowl, and created the rainbow effect for the inside of the cake. I baked them according to the packages. Once they were cooled, I cut the tops of the cakes off, so they would sit more evenly. I then started layering the cakes, with frosting in between them. I do not recommend using a lot of frosting in between the layers, because this is a very tall cake! Just enough to hold it together.
Then I frosted it all white. I created the rainbow on top of the cake with skittles, and marshmallows for the clouds. I had extra frosting, so I piped around the bottom of the cake as well. Once, I had it complete I placed it in the fridge for a few hours so that everything would set.
This was an easy cake to bake, and was very good! A real hit for our Rainbow Princess party!
