Cool Homemade Teacher Appreciation Day Cake

I was asked to make the cake for our school’s teacher appreciation day. The vanilla globe cake (using Wilton sports ball pan) sits on top of a 14″ round two-layer chocolate mousse cake covered in buttercream. I decorated with pullout grass tip, royal icing flowers, and royal icing “teachers”.

To make the teachers, I traced a gingerbread man cookie cutter onto a piece of paper and covered it with parchment paper. I traced and filled in each “person” with nude colored royal icing (thinned). Once they were dry, I decorated each teacher.

Make about 20 mini apples (red hearts with green leaf pullout). Let thoroughly dry (48 hours) and store in an airtight container in a cool, dry place. Attach each icing teacher to a stick with royal icing (on back). Make sure the cake is room temperature before putting the icing figures on. Attach apples with royal icing and let dry.

  1. Wow. This is a cool idea! You could make each teacher a cookie which is decorated to look like them. Unfortunately my teacher is much prettier than any cookie I’ve seen… Oh well maybe next year!
