I made this fairy cake for my niece Katie’s 6th birthday.
I used a basic butter cake mix and cooked it in a Christmas pudding tin, then did a base layer of butter icing to smooth it all out before I started the decoration.
I then made ready to roll icing (this is the first time I have made or used this type of icing so I was very nervous. 1 large egg white, 2 tablespoons of liquid glucose and 500g sifted icing sugar – mix and rolled until smoothed, wrap in plastic wrap (air tight) to stop it drying out. I made it a few days ahead to save time on decorating day. I also didn’t colour it until the day as I wanted to find cheap fairy wings (which I cut in half – bonus if I have to make another one as I already have the wings) and I didn’t know what colour they were going to be. Wings were only $3.50 and the barbie was $9.00 so I was thrilled.
I rolled out the icing after I had coloured it onto a floured bench top (corn flour is best to use) smoothed it all out and inserted the doll minus the legs and then attached the wings to the back of the cake with kebab skewers. With icing glitter pens I drew lines and then added the edible coloured balls.
So pleased with this.
