This Over the Hill cake is a chocolate cake with a chocolate gnashe filling. Iced with ‘plastic’ chocolate icing. This is made by just combining melted 70% chocolate with liquid glucose.
I made a 25cm base cake and another cake in a pudding bowl for the top of the hill. I made the figure out of sugarpaste, or gumpaste in the USA. To make this I just add gum tragacanth to my coloured fondant icing. This I also make myself.
I find it helpful to use a piece of spaghetti to make sure the head and sometimes, the hands, stay on firmly. The shrubs and rocks are also made out of fondant icing. I download pics and logos off the internet and laminate them and arrange them round the edges of the cake for extra fun.
