This Pink Octopus Birthday Cake is Anastasia’s first birthday cake! This was my second attempt at fondant, marshmallow fondant to be exact. I used the recipe from the Wilton website and made two different batches. The one batch I dyed all pink since I knew I would need so much, as the legs are all fondant. I added gel coloring to the melted marshmallows before I mixed it with the powdered sugar.
For the other colors, I just kneaded the gel dye into the correct portion of fondant. Marshmallow fondant is actually really easy to work with! It’s much less intimidating than you think. It’s a lot like playing with playdough. I used an 8 inch round (two layers) cake for the bottom and the Wilton ball pan for the octopus body (a total of two cake mixes for the entire cake). The party hat is a sugar cone covered with fondant.
I frosted the entire cake with store bought frosting before I added the fondant layer. My son had a fish cake for his first birthday so I kind of wanted to stick to the underwater theme for my daughter’s first birthday cake. I must say I was quite pleased with how it turned out!
