I saw a fish cake like this in a cake decorating book. It was so simple to make and was perfect for my son’s first birthday. I added to it by making the smaller fish so that he could have a “cake” all to himself and the gumdrop number 1 to mark the occasion.
I used a cake mix to bake two 9″ round cakes which I stacked, and I saved enough batter to make a cupcake to make the smaller fish. I used neon green food coloring to tint the frosting and a butter knife to apply it in a scale pattern. Then I used orange candy wedges for the fins, mouth and tail. You need to stack them in layers to bring them up to the height of the cake. I cut a jumbo marshmallow into a thin circle for the eye with a circle of black icing for the pupil. For the small fish I used gumdrops which I cut in half with kitchen scissors. And the number 1 is just gumdrops.
