Coolest Monster Truck Cake

My son is allergic to dairy, eggs, peanuts, tree nuts, sunflower, and coconut, so I couldn’t use the donut wheel method as shown in so many other monster truck cakes. I asked my husband to build me a 4-legged table approximately 4″ x 12.5″.

We then attached two PVC pipes to the tabletop as “axles”- one in front and one in back, and both wide enough for the left and right tires to fit on them. The axles provided much more support than just leaning the tires against the “table” legs. We wrapped the whole support system in tin foil.

I then made a white cake in a 9 x 13 pan and cut it lengthwise. I used half of the cake as the hood, body, and back of the truck. The other half I cut up and set part of it on top of the other half to make the cab of the truck.

For the wheels, I found a small sized bundt pan. I made chocolate tires (a homemade cake recipe made 2 tires) and covered them with a simple chocolate glaze (I used regular chocolate frosting in the can in a trial run and think it made the tires too heavy).

To ensure the monster truck cake wouldn’t ‘crash and burn’, I chilled the cake and didn’t assemble the tires until right before serving. Worked like a charm!

  3. Here is my chocolate cake recipe- it’s definitely the favorite among our relatives for “safe” cake!
    Wacky Cake (AKA Crazy Cake)
    Mix the following in a pan with a spoon:
    – 3 c flour
    – 2 c sugar
    – 1/3 c cocoa
    – 2 tsp baking soda
    – 1 tsp salt

    Make 3 wells in the pan and pour these ingredients in separately:
    – 2/3 c cooking oil
    – 2 TBSP vinegar
    – 2 tsp vanilla

    Pour 2 cups of water over the top and stir together.

    Bake 30-35 minutes in 9 x 13 pan at 350 degrees.
    For the frosting, I just used the Wilton Buttercream frosting recipe for the truck- subbing dairy-free margarine for the butter (I use Earth Balance, Fleischman’s Unsalted, or Willow Run)and soy milk for the milk.

There are so many cool designs on here but not many showing the front I will be making one this week so I came for ideas and tips I like the elevated idea and I always use Wilton cake boards as my base and after compiling all of everyone’s ideas I decided to cook two loaf size cakes one to hold up each end of the truck. I will cut off the top of the loaf then freeze them so I carve them in the center leaving a block on each end of the loaf as a flat base and point to attatch my donut tires. The center will be carved to reaemble the front and rear axles. But… I dont want the middle sagging so I’m going to cut a cake board down to the size of my trucks body so it has somethin flat and hopefully sturdy maybe a few dowels in the ends of loaves to further strengthen my structure.
    I’m a bit OCD when it comes to my caking :)
