This Train Birthday Cake was made for my friend Sarah’s 23rd birthday. She loves pink and had seen a chocolate train cake that I’d made for a housemate in my first year of university, and wanted one herself.
I only had a few hours to make this cake but luckily it worked out really well. My mum had made my sister and I train cakes for both our second birthdays so I just thought back to pictures of those. I would have liked to have another carriage but didn’t have a board big enough to accommodate my ideas!
The train and wagon were both made from a basic sponge mix. I used 1 large brownie tin about 12″ x 8″, 1.5 inches deep, and a normal loaf tin and just constructed the parts of the train needed. I stuck the pieces together with jam and then covered it in pink butter icing as it is Sarah’s favorite. Butter cream was just butter, icing sugar, vanilla essence and pink food colouring.
I covered a chopping board in green icing and then constructed a track from Cadbury’s chocolate fingers. Placed the cake on top and then gave the train 4 jammy dodger wheels. I hollowed the wagon out, covered it in butter cream and filled with sweets and gave it 2 wheels.
I added some decoration to the front of the train and then covered it in edible glitter (although you cant see it in the photo).
