I made this Pumper Truck cake at my three year old’s request. Of all things, he wanted a pumper truck!
I baked one 9″ x 13″ and two 8″ x 8″ cakes for the cab and flat bed. Once cooled, I stacked them, with icing between the layers, and wrapped the whole thing in plastic wrap to freeze overnight. Freezing makes them easier to carve and less crumbly.
For the tank, I baked two cakes in the 20 oz chicken broth cans, knowing that the top of the cake would round out. After cooling and freezing them in plastic, I cut them down to size and stuck them together, using icing and toothpicks, to get two rounded tank ends. I used cupcakes with the round tops cut off for the tires.
I iced the cake with buttercream frosting, doing a light layer first, then refridgerating it and adding another layer; by doing this, you don’t get many crumbs in the top layer of icing. I dipped the icing knife in hot water as I iced, to keep the frosting from peeling up the cake and to smooth out some spots. I used fondant icing to do the whites of the tires. The blue hose was fondant wrapped around a wood skewer. I piped on the rest of the details, using several colors in various icing bags and tips.
It turned out pretty well seeing this was my first attempt at a carved cake, but it took a long time. I was inspired by all the great cakes I saw on this site! Thanks for sharing!
