Being a third birthday cake, I hired a cake tin from my local cake supplies store for a very reasonable price. I also bought the store’s “utility” cake mixture to take the guess work out and ensure a good result. Otherwise, you could use a butter cake recipe.
To ensure the cake slid easily from the pan, I also bought a commercial “pan paste”, which I highly recommend to anyone using a “shaped” cake tin. The cake slides right out upon cooling.
I made a simple butter icing and coloured different batches in the colours I required. I iced the top of the cake first with pale grey icing, then placed pale grey sugar sprinkles on top to look like gravel under a railway track.
I then used my piping bag with a flat attachment to place “tracks” on top to make it look like railway sleepers. I used licorice strips for the iron. Using scissors, I cut the licorice strips down to size.
I then iced the edges of the cake in bright green to simulate grass, with my piping bag. I used a spatula/knife to spread icing within the hard to reach areas.
I finished the cake off by placing a train atop the track and sticking some candles on the cake board for blowing out by the party boy and writing “happy birthday” with an icing gel.
To make transportation easier, I also purchased a cake box from my cake supplier to take the cake to the play centre where the party was held. These are very inexpensive and well worth it.

This is the cake that I have been looking for! I wondered what to use for the track. Where do you buy grey sprinkles from. I have only seen them in rainbow colours and chocolate. I am going to use chocolate paste for the iron and matchmaker chocolates for the sleepers. I will endeavor to post my finished article! I may have to ask my mother to do the piping, as I have never done that before!!
