I started to make this Train Cake by baking individual square cupcakes (I found the square cupcake tin in a local supermarket). I then sandwiched two square cupcakes together with jam and butter cream to make the carriages tall.
I iced all the carriages using royal ready to roll pre-coloured icing and stuck smarties and jelly beans on top. I stuck the pink and orange chocolate wheels on with a dab of icing. Once the cakes were done I covered the board with green royal icing and piped the Happy Birthday message in the middle.
For the track, I used licorice laces and filled the space in between with nerds to make it look like gravel. I then laid the chocolate fingers on top to make the track.
The teddy conductor is molded out of sugar paste and I cheated because I bought the train engine from a cake suppliers!
I finished off with candles and my niece loved it! I wanted to make sure that a train cake was not going to be too “boyish” so I used bright colors.
