I made this homemade Saint Louis Cardinal fan cake for my brother’s 21st birthday. He is a huge Cardinal fan as well as I am, so this was a fun project for me.
This cake was one not hard to make. I simply used a two layers of 13″ square cake pan for the bottom layer and two 9″ round cake pans for the top layer. The ball was two cupcakes pressed together.
The icing is homemade fondant, made with marshmallows and powdered sugar. The bottom layer is chocolate cake with cream cheese icing between and a thin layer all around the top and sides. Before icing, make sure to trim off the hard edges around the cake. This makes the fondant lay and shape much easier when applied.
The top layer is chocolate cake also with cream cheese icing between and a thin layer all around the top and sides. I also trimmed the side to help the fondant lay better.
The ball on top is two white cupcakes with cream cheese icing between and all around. I did have to trim a little off the bottoms of the cupcakes to help round it. The fondant makes it easier to round and shapes the cake very well. I painted the stitches of the ball on with red gel food coloring. I am not an artist, but I think it turned out pretty good.
I used a cookie cutter for the bat and ball. The STL emblem I drew out on paper and cut out to make my own stencil. I then placed it over the fondant and cut out. I was very impressed with the way it turned out.
The ribbon around the bases of the cake is also fondant. The fondant also helps hold in the freshness of the cake and was very moist when we cut into it.
