My grandson wanted a race-track cake so my neighbor, Sharyn and I came up with this design. I cooked the cakes on Friday (20 x 25cm diameter cakes) and put them in the freezer for a little while on Saturday morning so our icing would’nt get cake crumbs coming through.
Then we set to and did the decorating. We iced both cakes with green icing then I did a template of the number three by using the cake tins as a guideline. We then outlined it onto the cake and filled it in with black icing. The trees are two marshmallows on candy-sticks, dipped in sugar and water then green coconut. The “hay bales” are trifle sponge cut into small squares dipped in chocolate icing then brown coconut.
I found some soft lollies that sort-of looked like tires which we placed around the side of the cake along with smarties etc. The kids loved it and we had such fun doing it. Roll on birthday number 4!
