I baked this surfer Joe birthday cake for my daughter’s boyfriend’s 20th birthday. He is an avid surfer so this was perfect for him. He loved it so much he didn’t want to cut it! But we did and it was delicious!
I used a 9x12x2 pan, a 2 cup Pyrex bowl and one box cake mix to bake this cake. After following the mixing instructions on the box I filled the bowl half way and then then rest went into the 9×12 pan. I baked it according to the box but the cake in the bowl did bake faster than the cake in the pan. After the cake was done and cooled I put it in the freezer for about 45 minutes. I put the cake that I baked in the bowl on its side and carved out the middle until it looked like a wave.
I carved out a small piece in the 9×12 cake so that the wave would fit in it and stand up. I made blue icing for the water and for the sand I used crushed graham crackers. I used white icing to make white caps. Also, I put a small amount of blue food coloring in a bowl and dipped a fork in it and then dragged it in the icing to make a slightly darker blue in the waves.
I printed a picture of him when he was surfing, a lifeguard and umbrella, laminated them and put them on the cake. The crab was a lollipop I got from the party store. Finally, I took a graham cracker and used a paring knife to make it look like drift wood and wrote To the Beach and Happy Birthday Joe.
