These Super Mario Birthday Cupcakes were made for my son’s 10th birthday. I made them with a mix and used silver cupcake liners. Just after removing them from the oven, while still in the pan, I flattened each cupcake so that it didn’t rise up in the middle (be careful, they’re hot, I used a folded paper towel to press down firmly).
I flavored the fondant by kneading a little vanilla extract in while coloring it. Each cupcake top was made by cutting out a light blue
circle with a cookie cutter from the fondant. I also used a star shaped cookie cutter for the stars. Chocolate jimmies (sprinkles) made GREAT eyes for the stars, fire flower, and mushrooms.
For the rest of them I shaped out each character (like play dough) from fondant. The pieces will stick together if you wet them with a little
water.
I frosted the cupcakes with vanilla icing, then attached the fondant tops to them.
