I made this cake in college. I went to a Cordon Blue college of culinary arts in Chicago. We had to make an anniversary cake using fondant, pastillage, royal icing, flowers and beading. I really think this was one of my best cakes in school. I have recently graduated and now am starting my own business.
For this cake first you make the pastillage, which is the frame base. Make royal icing flowers, let dry. Then you bake a 9in cake, cool then cover with fondant then you cut half circles to go on the border. Pipe bead under that using royal icing then you add the frame connected to the base by using royal icing as glue and glue it to the cake. Add your flowers around the frame then add small flowers to the frame.
