Coolest Hedgehog Decorated Birthday Cakes

My friend’s son watched Over the Hedge and wanted a hedgehog cake for his fifth birthday. (Could also be a porcupine I guess?) For the body and head I used a large bowl and a smaller bowl to bake the cakes in. I made two cake mixes and didn’t quite use all of the batter. I flattened out the bottoms (the top of the bowl) of both to make them sit right. For the head I just used a knife to angle it downward a little. I made the paws and tail out of scraps cut from the two cakes. I frosted the whole thing with caramel frosting (store bought). I dipped small pretzel sticks in chocolate chips (milk and semi-sweet for different colors). After they dried I stuck them in all over the body. I used plain pretzel sticks for claws coming out of the paws.

I used junior mints for the eyes and nose and chocolate chips for the mouth although I would have rather used thin black licorice for the mouth but didn’t have any. I also sprinkled green sugar around on the platter so it looked like grass. This made a lot of cake but wasn’t too hard at all!

Hedgehog Decorated Birthday Cakes

It is made of a simple sponge cake, which was baked in a round bowl. When it is cool you turn the cake out and slice it in half sandwiching the 2 flat sides (which were the open side of the bowl) together with icing to give a more hedgehog-like shape. You can then ice it and stick half chocolate buttons in as spikes and ice a snout on.

You can do many variations on the theme. I’m 17 and have been having these decorated birthday cakes every birthday since I was tiny… when I was small they were generally pink icing with rainbow buttons!

Hedgehog Decorated Birthday Cakes

This is my hedgehog cake :).

Here’s the recipe:

Cake Ingredients: 200g (8 oz) self raising flour, 150g (6 oz) caster sugar, 25g (1 oz) cocoa, 1tsp baking powder, pinch of salt, 1tsp natural vanilla essence, 1/4 tsp (a few drops!) white wine vinegar, 100ml (4 fl oz) vegetable oil, 225ml (9 fl oz) water.

Icing Ingredients: 150g (6 oz) vegan cream cheese, 75g (3 oz) vegan margarine, 110g (4 oz) vegan chocolate, 750g (1 lb 10 oz) icing sugar, 1/2 tsp vanilla essence – optional.

To Decorate: Vegan Chocolate Buttons from Montezumas (Or you can make the icing into spikes), Raisins or coffee beans for eyes, Jelly sweet or glace cherry for nose, Green Icing for grass, decorations or green cake board (optional).

Decorated birthday cakes – Instructions:

1) Put self-raising flour, Soya flour, baking powder, salt, sugar, and cocoa in a bowl and mix well., 2) Pour over vegetable oil, vanilla essence and vinegar, and then the water. 3) Mix thoroughly with a wooden spoon or electric whisk and pour into two round sandwich tins. Cook for about 25 minutes at 200ºC/400ºF until cooked.

Decorated birthday cakes – Icing Instructions:

1) Break the chocolate into pieces, and melt it in a bowl over a pan of simmering water., 2) Blend the cream cheese and margarine in a bowl until smooth, then stir in the melted chocolate., 3) Sieve the icing sugar and beat it into the cream cheese and margarine a little at a time. Add vanilla if you’re using it., Decoration:, 1) Sandwich the cakes together using a little icing. Cut two pieces from each side of the cake (they should be quarter of the diameter of the cake). Trim two small triangles off the front to form the snout (reserve these for baby hedgehog(s))., 2) Attach the sides to the top of the cake with more icing to form a hedgehog shape., 3) Cover the whole cake in icing., 4) Add nose and eyes., 5) Wipe the Montezuma’s giant dark chocolate buttons (with thumb or kitchen roll) to make them shiny. Snap them in half, and stick the broken sides into the icing to form the spines., 6) If you want, use the off cuts of cake to make 1 or 2 baby hedgehogs. You could use green icing to make ‘grass’ swirls round the edge of the plate, or use a green plate or board.
