I made this pepperoni pizza cake for my husband in honor of his favorite pizza shop that had closed down, reopening many years later. I don’t usually bake cakes from scratch, so I just used a yellow cake mix from the store and prepared the cake in two 9″ round pans. On one cake layer I just frosted it and did simple writing welcoming back the pizza shop, but for the cake in the second pan I did my best to make it look like a pepperoni pizza.
I decorated it first with a layer of strawberry preserves to simulate pizza sauce. I then sprinkled pieces of shaved white chocolate on top of that to look like shredded mozzarella cheese. Finally, I cut circles out of a strawberry Fruit Roll-Up and placed them on top to look like pepperoni. People seemed to really like the cake and didn’t mind that there wasn’t frosting on it!
