Coolest 13th Birthday Tiffany & Co. Inspired Cake

My daughter LOVES Tiffany & Co and Tiffany Blue. I made 3- 10″ round cakes (2 lemon, 1 strawberry) and we dyed the lemon cakes Tiffany Blue. We used Wilton’s Teal and Royal Blue to achieve the color for the cakes and icing. The icing is Whipped Buttercream (In hindsight, I’d have used Fondarific Fondant instead of Buttercream to achieve a perfectly smooth look). The layers of the cake are Graham Crackers with melted butter and sugar with store-bought Lemon Curd on top.

I did a crumb coat and stuck the cake in the fridge. During that time, I rolled and cut the Fondarific Fondant to make a bow and balls. You need about 24″ of strips to make the ribbon for a 10″ round cake. We used the balls to disguise any icing inconsistencies around the bottom. I needed to use toothpicks to hold the ribbon in place and we put fondant balls over the tops of the picks so you couldn’t see them.
What you’ll need:
2 boxes Lemon Cake Mix, 1 box Strawberry Cake Mix
1 box lemon pudding, 1 box vanilla pudding
4 containers of Buttercream icing (prefer non-whipped)
1lb tub of Fondant (white)
Graham Cracker Crumbs (whole box), 4 sticks butter, 1 container of pre-made lemon curd
12 eggs
3 cups oil, 3 cups milk
Make cake mixes this way: Box of mix, 4 eggs, 1 c oil, 1 c milk, 1 box pudding (lemon- I made both batches together and only used one box of pudding for both mixes). Bake according to box instructions. Allow to cool slightly then transfer to cooling rack. This cake mix will produce pound cake consistency, but with a nice fluff to it. Incredibly moist and tasty. Ice and decorate. Store refrigerated.
*Fondant: I’ve used other brands in the past and they tasted- YUCKY. I found Fondarific on amazon.com and thought I’d give it a try. It’s Buttercream Fondant and absolutely delicious. If you go this route, they make pre-colored buttercream fondant you can use or simply dye like we did. I’d be sure to get a 2lb tub if you’re going this route. You will still need the regular buttercream icing to first coat the entire cake before laying the rolled out fondant.
*Topping: I was lucky enough to find the silver “C” but my Plan B was to use wax paper and melt some chocolate and make a huge, chocolate C with a cake pick attached at the bottom (you need to make something attached to the letter on top to get it to stick in the cake)
