After hours of messaging back and forth with pictures from Pinterest, I read “I like the Winnie the Pooh Cake with no Pooh…just polka dots, a blue bow and his full name on the front and initials on back and with butter cream and lemon filling in the top.”
I am just a church Granny who happened to take all four Wilton Classes. I made the pastel blue bow first by taking out my Wilton class book…AGAIN. You know, sometimes old brain cells just crumble. I made from (50/50—sorta) Wilton fondant and gum paste the next day. I baked 10 and 8 inch layers using my usual cake mix as a base mix and adding buttermilk , Mexican vanilla and a touch of almond extracts. Completely cooled layers were torted and then placed in the freezer to chill. I know, I know some of you are shaking your heads…but they ARE more moist that way…and give Granny some slack…she ain’t as fast as she used to be. The next day I made TONS of buttercream icing and stored in airtight containers. There you go shaking that head again…Then on the day before delivery, I took the cakes out and let them thaw until I could handle them without breaking. Then bottom base was filled with Mexican vanilla buttercream and the top tier was filled with homemade lemon curd before icing with the MVB. Fondant pastels were rolled out and I used my new Ateco cutters and the smallest round from my Wilton class set to make the polka dots. Now, the question was: transport separate or together? How do I get the buttercream top on without messing up the icing? No fondant top to handle. Oh, well I’ll just do it. Transport separate. Supports already in and carefully place top on. Yes, there was a little icing disturbance…nothing a little warm knife can’t fix. Assemble bow, take a picture and apologize for not being able to stay. The ladies thought it was perfect…I know different. But Mommy was well pleased. And many compliments later on how good it tasted, how moist and how pretty it was. So, here is my shower of sweetness delivered front and back… Just a granny baker and wanna-be decorator….Just goes to show that even grannies can give it a go.
