My dad is a Potawatomi Indian from the Bear Clan and I honored him, his birthday, and his heritage all in one yummy dark chocolate bear clan birthday cake with raspberry filling. The whole cake was made from scratch.
Steps for Making the Bear Clan Birthday Cake
- I sculpted my dad’s cake by hand and used modelling chocolate for the inside of the ears. I used fondant for the eyes, nose, and mouth.
- I cut out a cardboard strip about 2 1/2 inches wide and made it into a 3D triangle that I laid the inside of the mouth over to dry so it would retain its shape. Of course, this was before I was introduced to tylose powder which when added to fondant will make it harden much quicker.
- I used chocolate buttercream frosting and a large plain tip to build up a lot of the facial contours and then went over the whole cake with two different sized grass/hair tips. Two batches of chocolate buttercream, consisting of one with dark chocolate cocoa and one with regular cocoa, made the fur more realistic.
My 5 year old nephew said that he didn’t want to get too close to the cake because the bear was too scary looking.
