My son loves real ducks. He watched the ducks grow up from ducklings in our pond and one of his first words was “Duck!” I wanted to make him a Real Ducky Cake, but the only examples I could find were rubber duckies or hunter’s cakes. I decided to make my own pattern. I cut the body and tail out from a circular cake, then used the remainder to make a neck and head.
The cake is Carrot Cake from the Heritage Cookbook and Cream Cheese frosting from the same cook book. I added cocoa powder to get the brown and swirled it. I added an extra large dollop of white frosting to make the wing then marbled it again. The beak is chocolate cream cheese frosting with a drop of yellow and red food coloring. The eye is a raisin.
I froze the cake before icing and after to keep the peaks nice and fresh for the party.
