I made this Jungle Birthday Cake for my daughter’s second birthday. This was my first ever attempt using fondant and my first layered birthday cake. The frosting and animals are all made of marshmallow fondant and it was surprisingly simple to make and easy to work with.
The bottom part of the cake is white cake with a rhubarb blueberry filling. The top part is a rich chocolate cake with a hazelnut cream filling.
One thing to note is that you must frost the cake with a thin layer of frosting before applying the fondant or it will not stick. Also, when making a layer cake like this, it is important to apply the fondant to the bottom and let it sit/harden a bit before adding the top layer.
I had also read that it was easier to freeze the cake layers and decorate them while they were frozen and it seemed to work well that way.
My daughter loved her cake and I had fun making it!
