Coolest Pink Princess Castle Cake

This Pink princess castle cake was for my 4 year old niece Martha who was having a Princess and Pirate party. I get a lot of ideas from this website and love browsing the designs – they really are the coolest!

I used chocolate swirl sponge for this cake, using a rectangle baking pan for the bottom layer and a small 6″ circle for the top. I decided it would like more like a fort this way and the turrets wouldn’t look too out of place. I used white fondant with red gel color for the main icing. I’m new with fondant (this is my 3rd cake using it) and I cant seem to get it smoothed or tucked in but other wise I’m happy with how it turned out.

I cut little troughs in the icing so that the “turrets” sat flat and “glued” them in place with butter cream (when it was done I put the whole thing in the fridge so it went hard). I added details using different colored icing and brown paper for a castle door. The “bushes” are colored butter cream with shop bought sugar flowers.

For the crown I used a cookie cutter on some left over pink fondant, brushed it wet with plain water and used loads of edible glitter. I then propped it up with some more fondant. It was dried separately and put on last with the candles. I also did some chocolate cupcakes with home made cocktail stick jolly roger flags.

When I arrived at the party with this cake dressed as Snow White my niece Martha was thrilled. I think I might just be the best Aunty ever.
