When my daughter asked me for a Barbie Princess Birthday Cake, my heart sank. The only cakes I had ever made were the type made from a packet!
So I said I’d have a go and if it all turned out wrong, I’d ask someone to make it for me.
Well apart from being a bit wonky the first try turned out ok-ish so I said I’d do it!
The night before I was very very nervous as I’d invited the whole class and all the parents would see it. I used a Savarin tin for the top and then sandwich tins for the rest. She ended up being 5 layers tall. I made a vanilla mix and a chocolate one and alternated them so it looked striped when you cut into it.
I butter iced it and then layered white fondant over it. I added pink fondant over the top in an over-skirt idea. I cling filmed the legs of the doll and stuck her in. She was too tall! So I had to patch it a little and I think she ended up looking a bit bumpy around the hips BUT aren’t all women of a certain age, and Barbie is getting on a bit!
I decorated it with Princess sprinkles, Barbie glitter icing and pre-made flowers. My daughter loved it and I was really proud of myself. I’m a bit worried about next year though as this has kind of set the standard now. Who knows what she’ll ask for next!
