This Barbie Doll Birthday Cake Design is my first attempt at a Barbie cake and I made this one as a favour to a friend for her 4 year old daughter who’s only instructions to her mum was a gypsy wedding cake and pink! The cake is Madeira and two separate cakes made with a tiffin tin for the top and a 7.5″ cake for the bottom. I used Madeira as it is easy to carve into shape and withstands the weight of the icing.
I cut holes from the middle of the cake for the doll as I wanted to keep the legs on so the little girl could play with it afterward. Then I sandwiched the layers together with butter cream and jam then covered the whole thing with the buttercream. I then covered the whole thing with rolled icing. To make the frills I cut circles from more rolled icing coloured with a paste colour and edging with a toothpick and attached from the bottom up.
I then put the doll in cling film to keep her clean and put her in the cake and covered her with icing. Next I put some pre bought flowers and covered it all over with edible glitter.
