My daughters are crazy about Barbies, Princesses and Mermaids. So one day, we started looking up pictures of Barbie cakes online. We were so inspired by the beautiful cakes at this website! My oldest daughter decided she wanted a mermaid cake. I let her pick out her own Barbie at the store, and for her 5th birthday we created this cake.
It tasted as good as it looked. I used butter cream frosting all over. The sand is a mixture of brown sugar, graham cracker crumbs and raw sugar. The seashells are white chocolate candy melts with apricot colored sparkle dust which I dipped in vanilla extract and painted onto the shells. The fish and crabs are various colored candy melts. I used pearl candies as accents, and the entire cake is dusted with edible “disco dust” shimmer.
All of the decorating was done between 9pm and 1am the day before the birthday party (the only way Moms can do this is when the kids are sleeping). She was so surprised. Her friends thought the candy seashells were the best part!
