My grand-daughter, Andrea turned 8 last month and I wanted to make her a Barbie cake. The result you see here. What you need to understand is I have NEVER done anything like this before!! I got online and hunted around for some examples, then just started designing.
The cake, from start to finish, took from around 10am Saturday until about 2am on Sunday. Everything you see in the picture is edible, except for the pink items on the bottom layer and the Barbie, of course. Barbie’s clothing, however, is edible.
The cake took 5 cake mixes, 4 pounds of powdered sugar, 24 ozs. of mini-marshmallows, various food colorings, and A LOT of patience. The bottom layer is a 12″ round cake, the dress is made up of 2 8″ rounds, and a bowl shaped top layer. Each layer was swirl colored with pink and purple, white and purple, or white and pink. I used a lot of gel coloring to get very intense coloring. Between the layers is vanilla cream frosting mixed with strawberry fruit jam.
There is a crumb coat of frosting all over the cake. Then everything is covered by marshmallow fondant colored as required.
It was fun to do, Andrea was beaming, and everyone enjoyed it immensely.
Lot of work but it turned out great!
