My daughter and I made this Taco Birthday Cake for my husband’s birthday. He loves the ice cream novelty, Choco Taco. We learned that a lot of people have never heard of Choco Taco. It is like a Drumstick ice cream treat but shaped like a taco.
I used a 16-inch pizza pan to make the cake. I made 2 pizza size cakes, froze them and then cut them in half when I was ready to assemble the cake. I used buttercream icing between cake layers and then used rolled fondant for the shell. I pressed it onto a grid style cooling rack to get the waffle cone look. I made an easy chocolate ganache recipe (and added chopped peanuts to this) to make the chocolate over the top of the taco.
The logo I cut out of fruit roll-ups and placed on rolled fondant. I had to use numerous fruit roll-ups as they all seem to come with tongue-tattoos and edible writing stuff all over them!
If I ever make it again I would place it on a silver cake board or tinfoil so it looks like it is coming out of the package which is silver.
