This homemade Cinderella cake was my first attempt at using fondant.
I used marshmellow fondant, made a few weeks in advance. I left the color white until it was time to make it.
I found a large stainless steel mixing bowl. It took two boxes of cake mix. I baked at 350 degrees for approx 1 hour 20 minutes; it is a good idea to keep an eye on it though. I also had to make two round 9″ cakes in order to reach the height of the Barbie, which meant using another box of cake mix.
I used the typical butter cream frosting, doubling the recipe. I had plenty of frosting, even to frost in between the layers and the entire outside.
I undressed the doll and wrapped the lower part with Seran wrap. I applied the fondant to the cake, covered the top part of Barbie with some and then stuck her in a hole I had made in the cake. I used some of the butter cream frosting to fill in any gaps.
It was a surprise for my niece’s fourth birthday and she loved it.
Two tips:
Fondant seams are best sealed with a little water, using an unused paint brush.
It is not a good idea to roll out fondant in flour. I couldn’t get all the flour off the icing, once I had finished. Perhaps powdered sugar will work better on my next attempt! instead??
