Coolest Hello Kitty Cake

This was my first attempt at doing a birthday cake for my daughter Leah. I made this Hello Kitty cake using 5 Victoria sponge mixes from Tesco. I put it into a large 13″ roasting tin as I didn’t have any cake tins and covered using another tin the same size upside down in the oven for around 40 minutes.

I then cooled it, cut in half and spread seedless jam and creme inside. I coloured the icing pink then smoothed it all over with a long flat bread knife which I dipped in hot water to smooth out.

I had a postcard of Hello Kitty which I used on white icing and cut out with a sharp knife. I used a sweetie for the nose and liquorice eyes, I then outlined with black icing. I used pink/blue designer icing from Asda to go round the edge and for Kitty’s bow. I then put rainbow drops all round the edge.

I took the picture before I wrote Leah’s name on it, took me nearly six hours to make but was so worth it,my little girl and everybody who came to the party loved how it looked and tasted.

Having no experience with baking or cake decorating and no special tools for the job I don’t think did too bad!
