I made this Finding Nemo Birthday Cake for my niece’s second birthday. I used a 12″ double layer and an 8″ double layer homemade white cake with cooked pineapple filling. The filling is just one can of undrained crushed pineapple, one cup of sugar and about 4 tablespoons of cornstarch (stir the cornstarch into the sugar before adding to the pineapple to keep it from clumping).
Add the sugar mixture to the pineapple and cook on medium-high heat, stirring often, until bubbly and thick. Let the filling cook completely before putting between cake layers. This is one of my favorite fillings for white or yellow cakes.
I used Royal frosting a few days earlier to make most of the decorations including her name in seaweed across the bottom. I used buttercream to frost the cake and make the purple plants and bubbles. The sand around the bottom is made from crushed graham crackers. I was able to find the Nemo and Dori figures at a little bake shop.
I got most of my inspiration from several cakes on this site. The birthday girl (but mostly her mom) were very happy with the results. This was a very fun cake to do!

Your cake is awesome. When you said you made the royal frosting a few days earlier….did you make the decor and transfer them to the cake? What was your trick? I am interested in making this cake for my Nephew.
