I like to make our kids’ birthday cakes out of cupcakes so that they are quick and easy to serve. I bake a batch of 18-24 cupcakes. I can bake half of them chocolate and half vanilla cake to suit the kids’ tastes. I placed them on a cake board in whatever configuration I think will work for the cake. Sometimes I have to shave a little off the top if any of the cupcake tops get very rounded.
I frosted this grouping of cupcakes with buttercream so it won’t fall between the cracks. I used a whitener to make sure the frosting was nice and white and not yellowed. I used a toothpick to draw Hello Kitty into the white buttercream before outlining it with the black piped frosting.
I loved doing the Hello Kitty 4th Birthday Cake because the art is basically a doodle and nothing too technical.
