I had a request from a family member for a Hello Kitty birthday cake for her 8th birthday. I considered renting a shaped pan, but decided to just go with a 2-layer 8-inch cake instead. As per her request, it was white cake with white/vanilla butter cream frosting.
After letting my 2 8-inch round cakes cool, I layered some vanilla frosting between them and stacked them, then filled the gaps on the sides with more vanilla.
I combined white butter cream frosting with Wilton “Rose” icing color, and did a couple of layers on the whole cake and sides for the background pink.
After letting that set for a while, I used a printed and cut out shape of Hello Kitty and traced the outline into my rose icing layer with a toothpick. I then filled the whole outline with white butter cream.
Then I cut my paper template down to just the bow and traced it on top again with a toothpick and filled it in with white butter cream with lots of “Red Red” Wilton icing color.
I did the outline of the face, bow and whiskers with prepared black decorating icing and the smallest circular tip I had. The eyes and the nose are jellybeans that have been cut in half.
The cake was a huge success, and I was glad I didn’t have to use fondant!
