This Little Mermaid Birthday Cake was for my daughter’s second birthday. Little Mermaid is her absolute favorite. Grandma and I did a collaborative effort in making this cake.
First I made two 9 x 13 cakes, from a box, one chocolate, one white. Our local grocery store sells the frosting like that put on store bought cakes, by the pound, so that is what we used. After freezing the cakes separately, I put them on a purple cellophane wrapped board. First the chocolate frosting, then the white cake. We then froze it again with a light layering of frosting.
Next came the decorating. I printed the mermaid picture on photo paper that is used on the top of the cake. We used Kelly green frosting from Wiltons to do the trim around the bottom and top. Then the top was made to look like waves with a splash of blue tinted frosting mixed in to look like the ocean. Then we used glitter green Wilton frosting to put the seaweed white ball sprinkles to look sort of like sand, and purple sugar sprinkles for decorations.
Then I bought a ‘toob’ of sea creatures that were added, along with costume beaded necklaces. The Flounder and Sebastian picks were made by printing two mirrored images of each character and glueing a toothpick between them, then stick them on the side of the cake. I also put on Little Mermaid stickers around the board and we wrote “Happy Birthday Josie” with the sparkle green gel on the board.
This turned out so cute, my daughter absolutely loved it. She had to show everyone while it was still in the freezer!
