I made this Little Mermaid Cake for my niece last year for her 8th birthday. The Barbie is the 1/2 doll from the cake supply store. The fish tail I made out of fondant. It took about 2 weeks for it to fully dry. I simply shaped the fondant until I got what looked to me like a fish body and then I made a large tail that I adhered using a bit of water and let dry.
I used the edge of one of my cake tips to make the fish scales. Once the tail was dry, I used food coloring spray to airbrush the tail a blend of green and blue. Once dry, I went over it with luster dust to give it a bit of sheen.
Her seashell top was done with buttercream and tip #21 from Wilton. The fish on the side are homemade white chocolate fish.
It was a blast making this cake and today I will be making her 9th birthday cake.
