I have just starting baking cakes from home and a little boy who is a vegan due to many ailments asked me to do a chocolate dairy free homemade Spongebob cake. I took on the challenge and made one very happy 5 yr old.
This is a moist dairy free chocolate sponge cake made with almond milk, baking cocoa powder, dairy free butter and baking agents. This was extremely decadent and moist. So moist that I struggled to cut and form the masterpiece.
The trick is to bake it slowly for a longer period of time. I had to bake 3 cakes in order to make one large cake. It fed about 20 people and plenty left over for the freezer.
