I made this Thomas the Tank Engine Cake over the period of two days and it was my first attempt at a novelty cake. I had a great time!!
Everything is edible! The base is an egg less vanilla base with chocolate butter cream on one side and the other side a egg vanilla sponge with chocolate butter cream filling then covered in a vanilla butter cream and then fondant. I used a Delia sponge cake and worked well.
For the fondant I used a ready to roll cake fondant and bought a fondant rolling pin which was essential. I used flavored fondant for the other decorations.
Thomas was made using a Wilton cake pan with a chocolate sponge and iced in vanilla butter-cream and fondant with Oreos as the wheels.
The key was planning. My husband helped by sticking paper together to make a life size plan and then it was down to the right cake mixture – that took a few attempts but once I got that right it was plain sailing ( to a degree!!). One thing I learned is that it is not essential to get the flawless finish you see in cake books – I think a bit of a home made look is nice. Also you can use decoration to hide things.
