It’s my son’s 1st birthday and he just loves Mickey Mouse so, I started my ever trusted red velvet cake recipe with cream cheese frosting from scratch. I opted to make a cupcake tower with one small 6″ round cake on top as his “smash” cake. I used cupcake pans and a 6″ round pan. When the cakes are completely cooled, I placed a few cup fulls of frosting in a Ziploc bag, cut a small hole on one of the corner and used it as my pastry bag for piping the frosting on top of the cupcakes.
I used a red and blue icing colors to tint the white fondant and then rolled them into half inch thick to cover the fully frosted round cake. I then used cookie cutters for cutting stars on the fondant and freehand cut the Happy Birthday message. I also found some Mickey Mouse cupcake toppers and animal sugar candies at Hobby Lobby to decorate the cake. It took me 2 hours from start to finish but it was worth all the work.
