This year I made a cake for a friend’s Christmas dinner. I was allowed to make whatever I wanted. This Poinsettia Flowers Christmas cake took a couple of months to make as I could only work on weekends. I started by making poinsettia flowers. I wanted it to look like a real plant. This was my first time making a difficult flower. It took a lot of gum paste. Each petal and leaf was formed on its own wire. I colored the gum paste then finished their color with petal dust, then steamed them to hold the color.
The centers were also made out of gum paste painted with yellow on the top and avocado color on the bottom. Putting the flowers together was the most difficult as they are very brittle. I did break a few. Once the top was done I created the “pot”. It is made of both chocolate and vanilla cakes. The filling is Italian Meringue and with regular butter cream on the outside. I find regular butter cream holds fondant better.
My friend loved the cake. There was so much that they displayed and ate some at Christmas but also tried to save 1/2 to maintain the look for guests who came by the next day.
