This surfing cake was made to welcome a new baby to my friends who love the beach, Hawaii, and surfing. I usually just do two cakes a year, one birthday for each of my kids, but I make occasional exceptions, like this one. The best part is that mammoth wave. Hang Ten dudes! It was made using white and blue swirled gum paste that I formed around a 2 liter bottle of soda. If you look closely, you can see where the top of the bottle was, along the left side of the wave.
The surfboards and characters were gum paste and fondant. The flowers and palm trees were chocolate. Turbinado sugar was the sand, though I have since discovered that a combination of that, plus crushed grahams and coconut sugar make a better sand.
