My friend, Rachel was turning 40, and a group of her friends offered to throw her the grand party she wanted. She loves Phantom of the Opera, and wanted to be a “Princess”. She also wanted a black and white theme and to have an “elegant” party. Guests were asked to wear masks. One of her friends offered her house to host the party (over 75 people attending). Other friends decorated, and others took charge of food. It was a joint effort. I offered to make her cake.
With a large number of people attending, I wanted to make a 3 tiered cake, but lacked the vehicle to transport it and did not want to have to finish decorating at the party. Therefore, I
chose to do 3 layers, but put them on a floating stand. This way each layer could be transported separately. The cakes were covered in black fondant, with white fondant bows, red gumpaste roses and a large “R” for Rachel on top and a large “40” on the bottom layer. In addition, to add the “bling” she wanted, I put rhinestone ribbon around the layers of the cake.
The cake was displayed on top of a pool table that had been completely covered and decorated in red and black to give it a very special presentation. The top layer was completely chocolate, the middle layer, completely vanilla, and the bottom layer chocolate and vanilla.
It came out great, but most importantly, Rachel (aka princess) loved it.
