I made this Homemade 4th Birthday Barbie Cake for my nieces 4th birthday party. I wanted to make a Barbie cake using a full size Barbie and not the half doll you can buy at Cake stores. I baked 3 8″ round cakes and baked a cake in a large oven safe glass bowl. We froze the cakes overnight and then layered them together using buttercream icing. We used a serrated knife to carve out a small hole in the middle of each layer. The 8″ rounds were slightly larger then the bowl cake so we needed to carve away some of the cake to make the dress shape and it was definitely easier having the cakes be frozen for this step. Next we iced the whole outside of the cake with buttercream and let it sit in the fridge for an hour or so.
We rolled out white fondant and covered the cake with it, next we rolled out pink fondant and draped it over the back of the dress to create a train. We used a flower cookie cutter in two different sizes to cut out pink and white fondant flowers and added them to the dress. After wrapping the Barbies legs in cling wrap we placed her in the cake. Using a pastry bag and a star tip we iced around the waist of the barbie and around the bottom of the dress to cover an uneven edges of the fondant.
We baked cupcakes and placed them around the Barbie and put little moulded chocolate tiara’s in them. We also covered a piece of cardboard with tinfoil to make a little tray and placed a little cupcake in Barbies arms with candles for the birthday girl to blow out.
It was a lot of fun to make and I’m glad we used a full sized Barbie as the birthday girl loved receiving the barbie as part of the gift.
