My friend gave me a couple days notice to make her daughter a 6th birthday cake! She wanted it quite simple, easy to cut at party and wanted it pony themed with cupcakes!
It was quite a simple bake really – I cooked a large rectangular sponge and cut it into a large 6 shape. Butter creamed it and covered it in shredded coconut which I had dyed green with food coloring. I bought a pony mold and set chocolate in them and attached to cake to make it look like they were jumping through grass. The large pony needed stabilizing with cocktail stick behind!
Then added some pink flowers and her name made from rolled icing. The cupcakes all matched. Not bad for a quickie I thought!!
