My son wanted a surfer themed birthday cake this year, and I decided to try my hand at it myself. The cake is a Pillsbury box mix prepared as directed except I added a box of chocolate instant pudding mix to the batter. I made the cake a few days in advance, wrapped it in foil and froze it so it would be easier to work with once it came time to decorate.
The same day I baked the cake, I rolled out some fondant and curved it up over the side of an oversize coffee mug to let it harden for a few days and form the wave. I made sure to give the wave a sort of flat base behind the curve to help support the the wave.
One my son’s birthday, I took the cake out of the freezer and placed the now hardened fondant wave on top and right away frosted over the flat base of the wave with the blue frosting (vanilla frosting+blue food color) to help keep the wave in place. After that it was just a matter of making the frosting look like choppy ocean water, which was helped by using 2 shades of blue for the frosting.
It was delicious and a huge hit, I hope you enjoy my 7th birthday surfer cake !
