My daughter was born on “Cinco de Mayo,” so for her first birthday we decided on a fiesta theme. I did some online browsing for fiesta cakes and combined a few ideas to design her Baby’s First Birthday Cake.
I baked two double-layer cakes, one 10″ and one 8″, filled them with dulce de leche filling and stacked them using the standard wooden dowel and cake board assembly. They were iced in homemade vanilla buttercream frosting and smoothed using the Viva “paper towel” technique after the frosting had crusted.
I piped on cactus’s and rope borders onto the sides, and added some pink/orange/yellow “cactus flowers” that had been previously piped from Wilton decorator icing and allowed to dry on wax paper.
For the topper, I stacked two cupcakes and frosted them with a star tip to resemble a cactus (with a skewer holding them together and affixing them to the cake), and added some chocolate rocks around the base. The sleeping baby, serape, sombrero, maracas and iguana were made a week ahead of time from marshmallow fondant, and allowed to dry. (The serape was made by rolling out a thin sheet of MMF, affixing strips of different colors to the top of it.
I brushed some water onto the underside to make them stick and then lightly rolling over it with a rolling pin to ensure an even surface, and trimming the edges with a pizza cutter so they’d all be even.) The cake held up beautifully overnight and made a great centerpiece for our table. Ole!

My daughter is almost nine months old and her birthday is also Cinco de Mayo, I began looking for some ideas for her b-day and I too decided on a fiesta theme. I love this cake its soooo adorable. I think id like to use this idea.
