I created this cake for a co-workers daughter’s 4th birthday. I’ve made cakes in the past, but when she asked for a pool party… it seemed rather challenging. I made a full sheet cake and dug out a 2″ deep well for the pool. Icing the grass was tedious, but the effect looks great (#16 star tip). The pool is lined with white icing and the tiles are Reese’s Pieces; York Peppermint.
I learned to keep the blueberry Jell-O below the candy… some melted when the semi set jello came in contact. The pool ridge are mini-marshmallows. And the cobblestone is fondant impressed with a pattern.
I used fondant for the beach towels and diving board and Teddy Grahams with gummy lifesavers for the inter-tubes. I am very pleased with the outcome. The scariest part of the homemade backyard pool party birthday cake was the adding of the Jell-O. I made 3 boxes using the regular recipe and chilled in the fridge for about 2 hours, just until it started to thicken. Added it to the pool and continued chilling for 1/2 hour before adding the swimmers so they did not sink.
