This Barbie birthday cake is a very easy cake to do! Base is a 12 x 12 and Barbie’s skirt was baked in the Pampered Chef 2 qt batter bowl. I made the icing using the Snow white icing recipe from Wilton. The icing recipe calls for all shortening but I subbed 1 stick of unsalted butter softened and it turned out perfect.
I wrapped Barbie’s legs up to her hips in plastic wrap before inserting her in the cake. I cut a hole through the center of the skirt layer and inserted Barbie. Because she was taller than the skirt I just pushed her gently into the base cake until she was the right height for the skirt.
I also used Popsicle sticks to secure the skirt to the base cake. Instead of making icing flowers I used silk flowers.
