My 23 year old daughter wanted a Barbie birthday cake, so I decided to make one for her myself. I used the Wilton Barbie Cake pan and the Wilton Barbie instructions. I used an extra 8″ layer below the cake to add enough height for the Barbie to fit.
The cake is covered with fondant tinted pink. Tapered logs of fondant were put under the skirt to make the ruffles. The dress is decorated with sugar flowers made from royal icing. There are 23 miniature cupcakes around the cake with the candles. She loved the cake!
